Convection, conduction and why the heating type matters
Conduction heats the material by direct contact with a hot surface. It is quick to start and simple to build. The drawback is that material closest to the wall cooks faster than the rest, so stirring between draws is normal. Convection passes heated air through the chamber instead, extracting more evenly and giving cleaner flavour at the cost of a longer warm up.
